Ingredients:
2 cups of Almond Meal
2 large eggs
1 tsp olive oil
½ tsp salt
Mix all ingredients together to form the dough.
Roll out onto a non-stick pan as thin as possible.
Bake tortilla at 350 degrees for about 15 minutes until slightly browned.

I am having fun experimenting with all the different things you can put on top of the tortillas. Love putting sundried tomatoes, mushrooms, brochette, garlic, etc…

We tried this, and ended up with something more like a large cracker (maybe we over baked it?) It was really tasty, though! We made tostada's and I used it for my lunch meat - yum!
